INGREDIENTS

Chicken :

  • 1/2 tsp Salt
  • 2x 9oz/250g Chicken Breasts
  • 1 tablespoon each: Cajun Seasoning, Lime Juice, Olive Oil
  • 1/4 tsp Black Pepper

Pasta :

  • Salt & Black Pepper, to taste
  • Olive Oil, as needed
  • 1 cup / 250ml Double/Heavy Cream, at room temp
  • 1 heaped tsp Garlic, minced/finely diced
  • 1 heaped tbsp Fresh Parsley, finely diced (plus extra to serve)
  • 10.5oz/300g Penne
  • 2 tbsp Unsalted Butter
  • 1 tbsp Cajun Seasoning
  • 1 cup / 250ml Chicken Stock
  • 2 small Peppers, finely diced
  • 3.5oz / 100g Button Mushrooms, sliced
  • Lime Juice, to serve (optional)
  • 1 medium Onion, finely diced
  • 1.7oz / 50g Parmesan, plus extra to serve

EQUIPMENT

  • Pot & Colander (for pasta)
  • Jug (for stock & Cream)
  • Sharp Knife & Chopping Board
  • Fine Grater (for parmesan)
  • Zip Lock Bag (for marinade)
  • 12″ Frying Pan & Wooden Spoon

DIRECTIONS

  1. Butterfly 2 on the chicken breast changes breast size to 4 (please see the video for instructions). Put it in a zip lock bag (or bowl with a plastic lid), put 1 tablespoon of oil, 1 tablespoon of lemon juice, 1 tablespoon of cajun seasoning, 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Immerse yourself as long as you have time (up to one night). If you need time, rest at room temperature when preparing other ingredients.
  2. If the chicken is soaked in the refrigerator and fried on medium heat until both sides burn and the middle is white, raise it to room temperature. Place it on the cutting board until needed, then cut it into thin slices before adding it to the paste.
  3. At the same time, add 10.5 ounces / 300 g of pasta in salt water to cook until ivory. Save a cup of starchy water before drying.
  4. Fried mushrooms 3.5 ounces / 100 grams until the remaining oil is cooked in the chicken (or add more as needed). Add 2 chili powder and 1 onion and continue to saute until golden brown. Add 1 tablespoon of garlic and saute for several minutes. Add 1 tablespoon of cajun seasoning, and saute briefly, then melt 2 tablespoons of butter.
  5. Pour 1 cup / 250 ml of chicken stock, dip a little, then pour 1 cup / 250 ml of cream. Bring to a boil (stirring occasionally) until thick. Add 1.7 oz / 50 g of Parmesan and 1 tablespoon of parsley and spices. Add pasta and chicken, and stir until evenly mixed to thicken the sauce (if you need to thin the sauce, add a little starchy pasta water).
  6. Served with parmesan / parsley and lemon juice (optional).

Notes

20 minutes will be salty until very long, but if you are in a hurry, just cover with seasonings and fry immediately. I recommend keeping the chicken at least near room temperature to prevent the chicken from becoming tender.

Different cajun seasonings have different levels of seasonings. If you don’t like spices, I suggest you add a teaspoon to the paste and adjust.

Pasta – Please replace the pasta with the pasta you chose!

leftovers – I suggest returning them to the bowl with a little milk to refresh the sauce. A microwave can be used, but the cream will be a little greasy. Either way, make sure the chicken is hot.
